Salmon, Orange & Pomegranate Salad

  • 100 g. smoked salmon
  • 2 big oranges or (3 medium), peeled & sliced (depending on how much you can eat really)
  • 1/4 – 1/2 pomegranate
  • extra virgin oilve oil
  • 1/4 mild onion, sliced
  • fennel leaves (or parsley, chives, etc.), chopped
  • salt & pepper
  1. Put the smoked salmon on the plate.
  2. Follow with the sliced oranges, onion & pomegranate.
  3. Drizzle with extra virgin olive oil.  Sprinkle with fennel leaves, salt & pepper.
